japanese waterstones work quite well.  before sharpening, if it's a new chisel, you may want to first establish about a 30 degree bevel with a grinder, then move on to waterstones.

I too would avoid "gooey acidy stuff".  A little water and time will do just fine.  You should probably just let your repairman do his job and not interfere.

you can find good used planes on ebay, like older stanley or record.  spend a little time on tuning and setting up, and there is no need to spend $400.

I am considering making a wooden jointer plane. I asked a local maker/teacher about specifications, and he told me the plane should be about 30" long, mouth opening in the middle (15"), and the blade set at 45 degrees. I believe he uses a 2-3/8" blade.
